I like food and always like to try new stuff. I thought maybe some of you would have some good recipes to share. I got lots but will start with some good time Christmas cookies

Christmas Cookie Ingredients:

1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequilla

Sample the Cuervo to check quality.

Take a large bowl, check the Cuervo again, to be sure it is of the highest
quality, pour one level cup and drink.

Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar...Beat again.

At this point it's best to make sure the Cuervo is still OK, try another
cup ...just in case.

Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in
the cup of dried fruit. Pick the frigging fruit off floor...Mix on the
turner. If the fried druit gets stuck in the beaterers just pry it loose
with a drewscriver.

Sample the Cuervo to check for tonsisticity.

Next, sift two cups of salt, or something. Who giveshz a sheet. Check the
Jose Cuervo.

Now shift the lemon juice and strain your nuts. Add one table. Add a spoon
of sugar, or somefink. Whatever you can find.

Greash the oven. Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner!

Finally, throw the bowl through the window, finish the Cose Juervo and make
sure to put the stove in the dishwasher.

I have that same recipe, Spud, but with scotch!!! :shock: :o :wink:

I've got a couple meself. A really nice Christmas Squares recipe (also called Jewish Cookies for our hebrew brethren...it's just yummy).

Also a great Spanish Tomato Soup recipe...will cut and paste for now and find the gooey squares one later... (oh, yes, they're also called Chess Squares).

I'll give it in it's entirety but post little "weenies" that I've found can be substitued in parens. Not all, of course. Pick and choose your parens as you feel or not at all! Of course you can talk or not talk at all while making it. Or make some after you make some so you'll have TWO Tomato Soups.

Tomato Soup:

2 ounces butter (margerine)
2 carrots, chopped
2 medium-sized onion, chopped
1 large garlic clove, chopped (I use two...can't have enough gaalic)
6 medium-sized tomatoes, skinned and halved (if you don't feel like doing that then it's fine as the pureed skin gives it a nice texture)
4 cups chicken stock
salt
freshly ground black pepper
1/2 teaspoon nutmeg (a happy must!)
sugar (I don't use this as I don't believe in the cutting of the natural acid in tomatoes as I feel it also cuts some of the flavor.)
juice of 1/2 orange (I leave this out 'cause it may make the cream curdle if you're not careful)
1 cup heavy cream (yah, I go lowfat and it's still yummy)
3 tablespoons chopped mint

Melt the butter in a large saucepan over low heat. Add the carrots, onion and garlic and cook for approximately 10 minutes.

Add the tomatoes and the stock and continue to cook until the carrots are tender (takes a while).

Puree the soup in a blender or food processor (I use a hand blender right in the pot) and season to taste with salt and pepper. Add nutmeg and a pinch of sugar (??) and pour in the orange juice (??) and cream. If you find the soup is too thick, add a little milk.

Serve either hot or chilled. Sprinkle mint just before serving.

I got the fruitcake version, about 4 years ago.....

SWEET AND SOUR MEAT BALLS


3 eggs
1 medium onion, chopped
1 1/2 cups dry breadcrumb
1 teaspoon salt
2 lbs ground beef
2 tablespoons vegetable oil


Sauce
3 1/2 cups tomato juice some of Kares tomato soup would be a fantastic substute
1 cup packed brown sugar
10 gingersnaps, finely crushed
1/4 cup white vinegar
1 teaspoon salt
1. In a bowl, combine the eggs, onion, bread crumbs and salt.
2. Crumble beef over mixture and mix well.
3. Shape into 1-1/2" balls.
4. In a large skillet, brown meatballs in batches in oil.
5. Transfer to a greased 13"x9"x2" baking dish.
6. In a saucepan, combine the sauce ingredients.
7. Bring to a boil over medium heat, stirring until cookie crumbs are dissolved.
8. Pour over meatballs.
9. Bake uncovered at 350 degrees for 40-45 minutes or until meat is no longer pink.

Invite me over when you whip up a batch of these :wink:

Being the unemployeed member of my house, I've had a bit of time to experiment with cooking. Last month I somehow made a Lemon Chicken dish that was quite tasty...

Soy Sauce
Lemon Juice
Garlic Season-All
Black Pepper
Garlic Powder
Italian Seasoning
Minced Onion
4 Chicken Breasts
Butter or Margarine

1) Pre-heat oven to 350 degrees
2) Coat glass baking dish with butter.
3) Place chicken breasts in dish.
4) Splash on soy sauce and lemon juice (enough to coat top of chicken)
5) Sprinkle chicken with Garlic Season-All, black pepper, garlic powder,
Italian seasoning, and minced onion (to taste)
6) Place in oven, bake at 350 for 20 minutes
7) Turn chicken over, repeat steps 4 and 5.
8) Bake additional 15-20 minutes (until chicken is cooked thoroughly)
Don't tell me about rock and roll I'm out there in the clubs and on the streets and I'm living it! I am rock and roll!

Hmmmmmmmmmm....we eat a good deal of chicken, but we would have to make a larger amount. Still this one is something I think Dan and the kids and I would like.

The problem with my cooking is not the 'expermenting' I do. It's that when I do end up making something good, I usually forget how I made it. When I made that chicken, the wife made me go write it down right away. 8)

I made it last night and it as really good and was easy to prepare. I got to be careful not to spoil the wife, with me cooking.

Glad you liked it. I'm more miss than hit with my cooking, so I don't have to worry about spoiling the wife. Besides, she complains that I put too much garlic in my cooking, and drew the line at garlic in the corn flakes. :lol: I made something with pork chops last night that was so bad, I just threw it in the trash, and went to McDonalds (much to the kids' delight).

Too much garlic is possible? hmmm...not here in this house!

My step-dad used to use his smoker too much in my Mom's thought. She pulled it from him when he put sliced white bread in it.

Hey, by-tor and spud! Those look like great ?dinner? recipes! I?m always looking for new and tasty, yet relatively simple-to-make meals in our oh-so-busy lives. I must try them at the New Year when this pressure is off. Thanks!

Here's a cool recipe. My brother got this about ten years ago from a woman who provided some tasty treats at a Barmitzvah (spelling?) he was ?DJing.? I only know them as "Jewish Cookies" as named by the provider of the recipe. It has two layers. A woman here in the office said that they're called "Chess Squares." We?ve made them every Christmas since and they?re absolutely sinful! I can?t make them this year, nor can my brother the chef so I?m hoping someone at By-tor will try them and keep the yummy tradition alive in time for the Holidays! :D

You'll need:

Bottom Layer

1 - Box Yellow cake mix (the kind w/o the pudding)
1 - Stick Butter
1 - Egg

Melt butter in . Combine cake mix, butter and egg and press evenly onto
the bottom of greased 11"x19" pan.

Top Layer

1 - 8oz. pack of cream cheese
1 - Box powdered sugar
2 - Eggs
1 - Capful vanilla extract
1 - Cup shredded coconut
1 - Cup walnut meats

Soften cream cheese and mix with powdered sugar, eggs and vanilla. Fold in coconut and walnut and pour over bottom layer and spread evenly.
Bake in preheated oven @ 350 for 50-60 minutes till top is just beyond
golden brown. DO NOT try to cut while hot. You will make a gooey mess
and probably burn your tongue on all the scorching sugar and fat that
you can't wait to get into your mouth. :shock:

KARES4RUSH ADDITION: ADD A THIN LAYER OF CHOCOLATE CHIPS BETWEEN THE TOP AND BOTTOM LAYERS. PRESS SLIGHTLY INTO DOUGH SO THEY DON'T ROLL ALONG WHEN YOU SPREAD THE TOP LAYER ON. EVEN MORE SINFUL! PERFECT FOR THE HOLIDAYS! :twisted:

This is seriously not for the faint-of-heart and there are no redeeming nutritional qualities to this. Just pure indulgence and in moderation at that! I, myself don't eat that many sweets but if you can ?afford? to give yourself or your family and friends a treat like this once a year I highly recommend it.
