Do you add fat to Elk burger - or just grind it and throw it in?

Venison is so lean I have to add beef fat to keep it together for burgers.

Marns mom puts pork I believe into ground venison and elk to get it there.

Tonight, I brought home fresh picked spinach and cilantro with tortillas made by a local Mexican lady. I had some fresh chicken breast along with sharp cheddar cheese, fresh locally grown onions and garlic.

Chicken burritos. Yum!!!

They started introducing Elk back into my state not long ago, so maybe I'll get lucky. \m/


I'm scarfin' down some pancakes as I type, but I wouldn't recommend it. Makes for some sticky keys... :-D

We have elk on the peninsula. Sometimes we see them near the house, but it is rare. Eagle was out hiking a dry creek bed near the house one day, though, and he had to high tail it outta there because he ran into elk. He didn't want to get caught in a small space with one of those!

Chicken breast lightly seared in olive oil, sprinkled with oregano and parsley, then diced and laid on brown rice with soy sauce. Yum!
